Boreas Inn’s Lemon Sauce

(Makes one cup—I always double or triple the batch)
Combine and stir in a double boiler over hot water until thickened:

  • ¼ -1/2 cup sugar
  • 1 tablespoon cornstarch
  • 1 cupwater
  • Remove sauce from heat and stir in:
  • 2-3 tablespoonsbutter
  • ½ teaspoonlemon or orange rind or both
  • 1 ½ tablespoonslemon or lime juice OR
  • 3 tablespoonsorange juice (or combination of juices)
  • 1/8 teaspoonsalt

You can refrigerate this sauce for a couple of weeks. I don’t use a double boiler. I stir the cornstarch and sugar together before adding to the water and then stir until it thickens.
