(Makes one cup—I always double or triple the batch)
Combine and stir in a double boiler over hot water until thickened:
- ¼ -1/2 cup sugar
- 1 tablespoon cornstarch
- 1 cupwater
- Remove sauce from heat and stir in:
- 2-3 tablespoonsbutter
- ½ teaspoonlemon or orange rind or both
- 1 ½ tablespoonslemon or lime juice OR
- 3 tablespoonsorange juice (or combination of juices)
- 1/8 teaspoonsalt
You can refrigerate this sauce for a couple of weeks. I don’t use a double boiler. I stir the cornstarch and sugar together before adding to the water and then stir until it thickens.
